Advanced Apprenticeship in Professional Cookery  (Patisserie and Confectionery)

This Advanced Apprenticeship is for learners seeking to work as a pastry chef or learners already working in this role. The apprenticeship builds on the skills that have been developed at Level 2 or through industry experience. It is to enable you to develop complex patisserie skills, and establish a base of knowledge in design and display, portion control and costing, new technology and new products.  This apprenticeship will enable you to produce a wide range of patisserie and confectionery products.  It will give you a thorough overview of the pastry kitchen and prepare you for the reality of working in hospitality.


Entry requirements

A minimum of 4 GCSEs grade C or higher, including English and maths.  You must have completed an Intermediate apprenticeship in professional cookery or equivalent experience.

This apprenticeship is on a roll-on roll-off basis with starts every month.
